Seasonal Cyprus dinner
Chicken Ballotine with Commandaria Sauce
For the chicken
4 chicken breast fillets
200g spinach, frozen (well drained)
1 tablespoon olive oil
Smoked Spices
Freshly ground pepper
Fresh parsley, finely chopped
For the sauce
200g pumpkin, cut into cubes
150ml commandaria
1/2 tablespoon honey
1 tablespoon butter
1 sprig of fresh thyme
1 sprig of fresh rosemary
Salt and pepper
Preheat the oven to 200C and line a baking sheet with parchment paper.
