Easy Spicy Potato Soft Tacos

Hello May!  Here's hoping it's a great month for everyone.  This Sunday is Cinco de Mayo, or the fifth of May and lots of people like to celebrate it.  Its a holiday which celebrates the Mexican victory over the French forces at the Battle of Puebla on the 5th of May, 1862.
